Nourishing Carrot and Mushroom Noodle Soup

Method:

1. Sauté the Vegetables: Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent. Add the garlic and ginger, and sauté for another minute.

2. Add Carrots and Mushrooms: Add the sliced carrots and mushrooms to the pot. Cook for about 5 minutes until they start to soften.

3. Add Broth and Seasoning: Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.

4. Cook the Noodles: While the soup is simmering, cook the rice noodles according to the package instructions. Drain and set aside.

5. Finish the Soup: Stir in the soy sauce, miso paste, and sesame oil. Add the baby spinach and cook until wilted, about 2 minutes.

6. Combine and Serve: Divide the cooked rice noodles into bowls. Ladle the hot soup over the noodles. Garnish with fresh cilantro if desired.
